Our Experimental series of coffees are something else, these are the coffees for the curious minded. For those who want to test new processing methods, flavor characteristics, underutilized origins or a combination of all aforementioned attributes.

These are the coffees which make you tilt your head and question your palate in the most positive way possible. The coffees which make you stop in the middle of a tasting session and think “did I just taste that right?”

Our Experimental category showcases some of the best new things the coffee world has to offer and are something which we are very excited about. In these coffees there are always something which make us go “Oooh”

Our next Experimental series coffee comes from Finca El Vergel in Tolima, Colombia where we spent an amazing week end of last March. We were first introduced to Shady & Elias Bayters work by Kyle Ramage of Black & White Coffee Roasters and immediately we thought that we must get some of Vergel Estates coffee onto our selection. Not long after that we were on a plane to Colombia to meet with Shady & Elias and not long after that we simply fell in love with their coffee.

The brothers farm nestled at 1350 meters above sea level in Tolima, Colombia in a lush valley plane surrounded by mountains on all sides and it covers an astonishing 32 hectares of ground. Their estate is made out of five different smaller farms, on these farms they cultivate varietals such as Gesha, Java, Caturra among other varietals.

The coffee we chose from their selection is funky, wild and exotic. It surprised us in the best possible way because of it’s similarity to some of 90+ Gesha Estates coffees. On the cupping table it tasted like a raspberry-chocolate praline with a wild and boozy jelly filling. That initial kick was followed by flavors of violets, kiwi, watermelon and cacao. However the point which surprised us the most was when the coffee was almost cold. The booziness receded and gave way to flavors of sake and yuzu; both of which are on our list of favorite things. This was the point where we made the decision to buy this coffee.

This is our first year of working together with Shady and Elias but rest assured it will not be the last. We have a lot of good things coming up after this.
